Chewy Oatmeal Raisin Cookies

3 cups rolled oats
1/3 cup chopped walnuts or pecans (or more chocolate chips)
2/3 cup chocolate chips
1 cup raisins (or crasins)
1 cup water
1/2 cup sugar
1 cup light brown sugar
1/2 cup applesauce
2 large eggs or 3 large eggwhites
1/4 cup canola oil
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 pinch salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves

Preheat oven to 375°F. Line 2 baking sheets with parchment paper or coat with cooking spray.

Spread rolled oats and nuts on an ungreased baking sheet and toast until lightly browned, 5 to 7 minutes; set aside.

Combine raisins with water in a small saucepan. Bring to a simmer over low heat and cook until the raisins are plumped, about 10 minutes. Drain, discarding liquid, and set aside.

Beat sugars, applesauce, eggs, oil and vanilla in a large mixing bowl with an electric mixer until light and fluffy, about 5 minutes.

Sift flour, baking soda, baking powder, salt, cinnamon and cloves into another bowl. Stir the flour mixture into the applesauce mixture with a spoon.

Stir in the reserved oats, nuts, chips and raisins; mix well.

Drop the dough by rounded teaspoonfuls, about 2 inches apart, onto the prepared baking sheets. Pat them down to desired height. They will rise slightly when baked. Bake, one sheet at a time, until lightly brown. Approximately 7-9 minutes.

Well, I'm stumped for tonight so I think perhaps tomato soup and grilled cheese ;)

Chocolate Chess Pie II found at Allrecipes:

INGREDIENTS

* 1 1/2 cups white sugar
* 3 tablespoons unsweetened cocoa powder
* 2 eggs
* 1 (5 ounce) can evaporated milk
* 1/4 cup melted butter
* 1 teaspoon vanilla extract

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. Mix sugar and cocoa together. Beat the eggs then add to the cocoa mixture. Beat in the milk, butter and vanilla.
3. Pour mixture into 9 inch unbaked pie shell and bake at 350 degrees F (175 degrees C) for 45 minutes or until set. Let cool before slicing.

Brooke's Best Bombshell Brownies -- try them!!
INGREDIENTS

* 1 cup butter, melted
* 3 cups white sugar
* 1 tablespoon vanilla extract
* 4 eggs
* 1 1/2 cups all-purpose flour
* 1 cup unsweetened cocoa powder
* 1 teaspoon salt
* 1 cup semisweet chocolate chips



DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 baking dish.
2. Combine the melted butter, sugar, and vanilla in a large bowl. Beat in the eggs, one at a time, mixing well after each, until thoroughly blended.
3. Sift together the flour, cocoa powder, and salt. Gradually stir the flour mixture into the chocolate mixture until blended. Stir in the chocolate morsels. Spread the batter evenly into the prepared baking dish.
4. Bake in preheated oven until an inserted toothpick comes out clean, 35 to 40 minutes. Remove, and cool pan on wire rack before cutting.

Deliciously Healthy Chocolate Mousse

ingredients:
equal parts silken tofu and chocolate (i used chocolate chips)

melt chocolate. place chocolate in a blender or cuisinart with tofu. blend until smooth. refrigerate at least one hour. this mousse is yummiest when it chilled overnight. my friend amy passed this recipe along to me and it is surprisingly delicious!
